HOLT, Fla., May 15, 2017—The Holt Fire District is holding its Memorial Day rib sale May 26 and 27.
Tickets are on sale now at Holt Water Works. Price is $20 a rack, an increase of $2 from February’s Super Bowl weekend sale.
Ticket stubs left with the Fire District will have names and pick-up times. Customers can pick up their ribs at 1 and 5 p.m. both days.
While tickets aren’t required, they do guarantee ribs will be available for customers who order in advance, said Jim Connors, Holt Fire District commissioner.
“You can pay in advance and tell us when you’ll pick them up,” he said. “Everyone else is first-come, first-served.”
Seasoned with a secret rub, the ribs are smoked for two hours, then wrapped in foil and smoked for another two hours. Besides locking in the juices and steam, the foil helps keep the tender meat from falling off the bones.
Sides will also be available for $7 a pint, provided by Susan’s Restaurant.
Money from the three yearly rib sales usually go into Holt’s fireman fund. This sale is a fundraiser for Holt firefighter William Courtney who suffered a stroke in April while responding to a fire on Interstate 10.
Courtney hasn’t been able to go back to his paid job with the Okaloosa County Roads Division, said Connors.
“The money will go to help out the family,” he said.
