HOLT, Fla., Jan. 22, 2020–How better to enjoy the biggest football weekend of the year than with a rack (or two) of Holt Fire District’s smoked ribs.
The first ribs of the year go on sale Jan. 31 in the afternoon after the first set comes out of the smoker.
The Fire District is only smoking 200 racks this time around, with two smokings on Jan. 31 and only one on Feb. 1.
“Get your ribs early each day because as soon as they sell out, we’ll be closed,” Holt Fire Commissioner Jim Conners said.
Ribs sell for $20 a rack. Pint side dishes from Susan’s Restaurant include potato salad, baked beans and coleslaw—one for $4, two for $7 or three for $11.
Ribs go into the smoker around 8 a.m. both days. They’re smoked for two hours, then wrapped and smoked for another two hours.
The morning ribs are ready sometime between noon and 1 p.m. both days. The afternoon ribs come out of the smoker sometime after 5 p.m. Feb. 1.
For “out of towners”
The fire station is located at 490 U.S. 90 West in Holt.
If coming from Interstate 10, take exit 45, turn north toward U.S. 90, then west at the flashing red light. The station is on the left.
If coming from U.S. 90 in either direction, the fire station is on the south side of U.S. 90 and west side of the flashing yellow light.
The next rib sale is scheduled for Memorial Day weekend.
